Burning Barn rum is, endearingly, named after the family's barn, which burned down. This catastrophe inspired the Warwickshire-based family, which had long been producing fruit, to turn their talents to spirits and create two rums which reflect the heat and smoke of the barn fire (which was, prophetically, fuelled by sugar). This spiced rum has been designed to have real heat and is blended with hand-roasted ginger, bird's eye chilli, dark molasses, toasted coconut, allspice and vanilla. Red chilli heat, with lively ginger and crushed peppercorn in support. A pinch of brown sugar and diced almond gives it a suggestion of sweetness, but the spiciness is the star of the show.
