Scilly Spirit Island Gin 70cl

Produced on the Isles of Scilly just off the Cornish coast, it's Island Gin from Scilly Spirit! The distillery is based on St Mary's, and the recipe was inspired by a ship wreck on the island back in 1665. The ship was carrying Javan pepper, so that's there as one of the six botanicals which represent the oarsmen. Nose: A citrus-packed nose, with lighter hints of dry juniper and cardamom heat following up the orange and lime. Palate: Citrus once again stands out, but the juniper is dialled up on the palate, becoming powerfully vibrant and subtly oily. A hint of fennel gives it some herbal sweetness. Finish: Subtle salinity on the finish, with toasty cardamom and cinnamon.
