Trappiste Rochefort 6 pours an inviting chestnut brown, nearly transparent at the edges, with small bubbles drifting on the surface and some noticeable sediment on the bottom. Its aroma is like a cross between buttermilk biscuits and pumpernickel bread with spices and beer tossed in. Fruity undersmell is warming and pleasant. Magnificent! taste, it's sharp and dry with light, tart fruit presence. This beer is true to its nose and hits the palate with qualities of earth, nut, bread and yeast. It has a wildness to it that lends the slightest sour and bitter notes. As the beer warms you get more hints of spice, apple and alcohollike small apples or persimmons. These flavours are magnified by carbonation in the main taste, along with a tinge of bitterness from what I can only assume to be hops. The aftertaste is long, dry, spicy-bready, and leaves the tongue tingling. As much as I adore the Rochefort 10, this may be the abbey's best beer. It's well-balanced, accessible, delicious, and light enough to drink several. Highly recommended!
