This is a very popular manzanilla in Spain, a bone-dry, white style of sherry from Sanlúcar de Barrameda on the Atlantic coast of Andalucia. the silky texture of Manzanilla combined with a crisp acidity that really gets your tastebuds working. Try swirling a little around in your mouth and the juices start flowing. That saltiness that comes from the Atlantic air, and the softness that results from the traditional Solera—the method of aging sherry, its very pale straw in colour, the nose has candle wax, a kind of citrus wiff and what can only be described as a flor character. In the mouth it is quite fresh, if a little sharp, but nice and tangy. Almonds, candle wax and lemon make up the bulk of the flavours on the palate.
