Yorkshire Damson Wine is a Medium, Full-flavoured, very fruity red. Yorkshire Country Wines was established in 1989 by Richard and Gillian Brown in the cellars of a nineteenth-century flax mill. Here they produce a range of Traditional Fruit Wines. Country Wines are produced traditionally from fruits and flowers - without the use of grape juice - using recipes which have been tried and tested over many years of family wine-making. The processes are not unlike those you would use at home, only on a much larger scale, of course. The varieties fermented in the Winery include Elderberry, Blackberry, Damson, Gooseberry, Rhubarb, Cherry, and the ever-popular Elderflower. Most of the fruit is brought locally from the growers, and the Elderflowers are all picked by us and our friends in June every year!

The Elderflowers are first separated from their stalks, and then infused like tea. This is then sieved and the infusion added to the fermentation vat.

The fruits, such as Gooseberries, are put into barrels for several weeks, with added sugar, water and yeast. After pressing and sieving, the liquor is transferred into the vats where it continues its fermentation into wine
