(Speyside Central) Dailuaine Malt Whisky 1995 70cl

Dailuaine Malt Whisky 1995 bottled 2008. Dailuaine has seen several significant changes. It was one of the few distilleries to replace its' floor maltings with Saladin Boxes (no longer in use). A Dark Grains plant was commissioned to process pot ale and draff into a high protein cattle feed. The splendid granite double-storey dunnage cask warehouse lies empty, as all Dailuaine whisky is tankered away to be filled into casks at a central warehousing complex. Nose: Spicy oak tones along with fig rolls, soft baked fruit, Dundee cake and roasted walnut. Clean. Sweetish. Some sherry. Palate: Soft, but the weighty spirit holds its own pretty well against the pretty assertive wood. The mouth is perfectly in the mood of the nose with some discrete and fine woody hints. Medium-bodied. Very smooth indeed. Clean, malty, nutty. A big fruity boy with a very nice presence and a great complexity, somewhere between sherry, chocolate and malt with remote hints of tangerine. Finish Nice balance of fragrant smoky dryness Comment: Almost too perfect. Beautifully put together. Substantial. One for a cigar.
